Brewing Checklist

Please print this page out, and follow along by looking at the pictures of the Super Ultima-Bru on this website to identify the valves used in the process.

  • Prepare brewing area, making sure all supplies, equipment, and ingredients are at hand. Budget at least 5 hours for a brewing session.
  • Check propane tank volume (at least 1/3 full).
  • Inspect HLT, mashtun, and boilkettle for cleanliness.
  • Install mashtun and boilkettle false bottoms.
  • Attach water supply hose to manifold.
  • Check all valves- OFF
  • Main water supply (garden hose)- FULL ON
  • HLT siphon / (water inlet) valve- ON
  • Fill HLT to desired sight glass level.
  • HLT siphon / (water inlet) valve- OFF
  • Add water salts to HLT as required.
  • Main propane tank master valve- FULL ON
  • HLT burner needle valve- CRACK ON
  • Ignite HLT burner and adjust to desired level, checking that no hoses are in proximity to flame.
  • Lower (boil kettle plumbing) manifold water supply valve- FULL ON (to fill boil kettle with fresh water)
  • Boilkettle whirpool valve- FULL ON (second valve needed to be open for fresh water to run into boil kettle)
  • Fill boilkettle with water equivalent to batch size +25%
  • Lower Boil Kettle manifold water supply valve- OFF
  • Add appropriate volume of sanitizer to boilkettle, stir to mix. (recommended to use iodophor sanitizer)
  • Place chiller wort outlet hose in fermenter.
  • Wort chiller inlet valve- FULL ON (see boilkettle manifold)
  • Fill fermenter with sanitizer solution drained through boilkettle, chillers and chiller wort out hoses (accomplished by opening valves on boil kettle manifold as per above notes)
  • Wort chiller wort inlet valve- OFF
  • Boilkettle dump valve- OPEN
  • Drain remaining sanitizer solution.
  • Boilkettle dump valve- OFF
  • Lower (boilkettle) manifold water supply valve- FULL ON
  • Refill boilkettle with rinse water.
  • Lower (boilkettle) manifold water supply valve- OFF
  • Boilkettle dump valve- OPEN
  • Drain rinse water from boilkettle.
  • Boilkettle dump valve- OFF
  • Boilkettle whirlpool valve- OFF
    At this point, all valves on boil kettle manifold should be in the off position.
  • Check HLT thermometer for target temp.
  • When HLT temp at target, open mashtun E-Z fill Arm valve and monitor HLT sight glass for proper volume.
  • HLT burner valve- OFF (turn off burner)
  • Mashtun E-Z fill valve- OFF (when desired volume reached)
  • Mount step ladder and dump crushed grain into mashtun, mixing thoroughly. (you can use a wooden dowel or special "brewer's spurtle" to break up all clumps and expose to the hot liquor (water).
  • Place lid on mashtun.
  • Check and record strike temp.
  • Note time (start of mash).
  • Stir mash every 15 minutes.
  • At 15 minutes prior to end of mash: HLT burner valve- CRACK ON (make sure there is still water in the HLT)
  • Ignite HLT burner and bring liquor (water) up to lauter temp. (approx 168F - recommended mashout temp)
  • At end of mash, remove mashtun lid.
  • Perform starch conversion (iodine) test, if desired.
    (Iodine test must be performed by taking a disposable sample in a cup, and adding a few drops of iodine. If the sample turns blue, starch conversion is not complete. If it remains it's yellow color, starch conversion is complete. Dispose of sample and do NOT add back to mash.)
  • Install lauter/sparge arm.
  • Lauter/sparge arm valve- OPEN ½
  • Record HLT sight glass level.
  • When liquid level is 2 inches above grain bed, crack open mashtun drain hose valve and drain wort into clean container until it runs clear (approximately 1-2 quarts).
  • Mashtun drain hose valve- OFF
  • GENTLY return drained wort to top of mashtun.
  • Install mashtun drain hose into boilkettle.
  • Add first wort hops to boilkettle, if applicable.
  • Mashtun drain hose valve- OPEN ½
  • Adjust lauter arm valve and mashtun drain hose valves to maintain liquor level 2 inches above grainbed. Opening valves fully will lauter too fast!
  • When desired quantity of liquor has been drained from HLT, shut off lauter arm valve. Continue to drain mashtun into boilkettle until desired boil volume obtained.
  • Remove drain hose from boilkettle.
  • HLT burner valve- OFF
  • Boilkettle burner valve- CRACK ON
  • Ignite boilkettle burner and adjust to desired level, taking care that all hoses, etc. are safely clear of heat.
  • Bring wort to full rolling boil.
  • Note time of onset of boil.
  • Drain sanitizer from fermenter. (either invert fermentor or cover to avoid contaminants from entering sanitized fermentor)
  • Add hops and other ingredients to boilkettle per schedule.
  • At end of boil: boilkettle burner valve- OFF
  • Main propane tank valve- OFF
  • Boilkettle whirlpool valve- FULL OPEN
  • Boilkettle dump valve- OPEN
  • Collect wort sample, then close dump valve.
  • Sample "HYDRO"-chiller coolant valve- FULL OPEN
  • Pour wort sample into sample "HYDRO"-chiller and drop in hydrometer. Record OG when sample adequately cool.
  • Sample chiller coolant valve- CLOSED
  • Drain sample by opening sample dump valve. (Make sure to have a cup under dump valve to catch sample)
  • Temporarily remove chiller outlet hose from fermenter. DO NOT CONTAMINATE HOSE END.(you can place it in a bucket of iodophor solution you use to sanitize things like airlocks, stoppers, etc.. - This will keep it sanitized until you are ready to use it)
  • Wort chiller coolant valve- FULL OPEN
  • Wort chiller wort inlet valve- FULL OPEN
  • When sanitizer has been fully purged from outlet hose, and you can see only wort is running through the hose, put the end of the hose into your fermenter.
  • Adjust chiller inlet valve to maintain outlet temp at desired level (slower = cooler). You can monitor outflow temperature by looking at the dial thermometers on the outlet of the chillers.
  • Fill fermenter to desired level. Oxygenate and pitch yeast.
  • Clean BrewTree to spotless condition. Cleanup is much easier immediately after brewing, before deposits have a chance to set!
